The Kosher Movement

 

What was once a way of life dictated by religious reasons, kosher eating is now a genuine movement by a population that is always seeking healthier food options to serve for more health conscious families. Everything from beer to Tootsie Rolls has undergone a kosher makeover. A January 12, 2010 NY Times article by Kim Severson explained some trends in kosher eating.

 

Only 15% of kosher customers are purchasing based on religious reasons. Joe Regenstein is a food science professor at Cornell University. He has enacted countless studies that have directly correlated the growth in kosher eating and further education of consumers in the processing of kosher products. One fact is very simple to understand, consumers are now targeting all kosher products. According to Packaged Facts, kosher labeled products are expected to produce over $17 billion in retail dollars by 2013. Most retailers are not prepared to meet the increased level of consumer kosher demands.
